Katsuobushi is made from dried, smoked and fermented skipjack tuna (Katsuwonus pelamis), shaved into fine flakes. It is a key ingredient of Japanese cuisine and the base of dashi broth.

Preparation (dashi):
Heat 500 ml water, add 20 g bonito flakes just before boiling, simmer 1 minute, then let rest 2–3 minutes until the flakes sink. Strain.
