Tosazu is a traditional Japanese vinegar infused with dashi broth, made from smoked bonito (katsuobushi) and kombu seaweed. Enhanced with soy sauce and mirin, it offers a deep umami flavour and elegant smokiness. Originally from the Tosa region in Shikoku, this vinegar is widely used in Japanese cuisine for seasoning, marinating and finishing dishes with balance and complexity.
