Premium White Soy Sauce (Shiro Shoyu)
White soy sauce is a refined specialty from Aichi Prefecture, an area renowned for its wheat fields and pure water. Unlike traditional soy sauces, this premium version is made with 90% wheat and only 10% soy, resulting in a pale, almost transparent colour and a delicate, smooth and rounded flavour.
Its aromatic depth comes from the natural breakdown of wheat proteins, enhanced by sun-dried Mexican sea salt, delivering a subtle yet expressive umami without overpowering the dish.
