Originating from Aichi Prefecture, a region renowned for its high-quality wheat and pure, flavourful water, this white soy sauce (shiro shoyu) differs from traditional soy sauces by using 90% wheat and only 10% soybeans.
This unique composition gives it a delicate, almost transparent colour and a mild, rounded flavour that is rich in umami.
