Product Description
Shiokoji is a traditional Japanese fermented seasoning made from koji rice, rice and salt. This product is the first liquid version of shiokoji, designed for easier use and extended shelf life.
It is unpasteurized and rich in natural enzymes that:

enhance umami flavors,

act as a natural flavor enhancer,

tenderize meat and fish by breaking down connective tissues,

improve moisture retention,

increase sauce viscosity.
Liquid shiokoji is therefore a perfect ingredient for marinades, sauces and modern culinary applications.
Important: the product contains a small amount of alcohol (3.3%), resulting from fermentation and stabilization.
It is not intended as a beverage and is for culinary use only.
