Awase miso, meaning “blended miso,” is one of the most versatile types of miso in Japanese cuisine. This version combines soybeans, barley and rice, fermented for 3 to 6 months to develop a deeper, more robust flavor than lightly fermented misos.

Unpasteurized, it preserves the natural aromas and complexity created during fermentation. Its taste is bold, salty and rich in umami, making it ideal for hearty soups as well as refined modern dishes.
