Sea buckthorn is a shrub that grows up to three metres tall and thrives in the sunny, sandy, and rocky soils or mineral-poor grounds of Northern Europe. It can be found wild along the coasts of the Gulf of Bothnia and the Åland Islands. Ponthier sources its berries from small Latvian producers, where harvesting takes place in August and is done by hand – a challenging task due to the dense, thorny bushes.
Grown on small plots, sea buckthorn provides farmers with supplementary income, with most of the harvest destined for the food industry. Highly valued in Europe for its high vitamin content and tangy flavour, the purée boasts a bright orange colour and aromas reminiscent of ripe citrus fruits. Perfect in hot teas, cocktails, sauces, pies, and desserts.
