The Ponthier Wild Quince Purée is produced from wild quince trees growing in the Baronnies Provençales Regional Park and around Mont Ventoux in Provence. This rare variety is prized for its rounded shape, soft yellow skin and naturally velvety surface.
Ponthier sources these quinces from the Guintrand family, a producer established in 1898 and recognised as an “Entreprise du Patrimoine Vivant”, a French distinction awarded to companies preserving exceptional traditional craftsmanship. Their artisanal expertise in processing quince has been passed down through four generations.
During processing, the quinces are peeled by hand, then gently cooked in water to soften the fruit. This cooking water becomes a fragrant juice that captures the fruit’s aromatic compounds and is later reincorporated into the purée, resulting in a product with remarkable floral complexity and depth. The purée has a soft, powdered colour and a naturally granular texture, faithfully reflecting the original fruit.
