This exceptional dashi concentrate is made from Hidaka kombu, focusing on its rarest and most valuable part: ne kombu, the section closest to the root. This part is extremely rich in nutrients and umami compounds. Each kombu seaweed yields only a few centimeters of ne kombu, making it a truly precious ingredient.
When kombu is young, this root section contains high levels of fiber, iodine, calcium, iron and potassium. The extract is produced using a slow, traditional process: the kombu is cooked for three days, until it fully dissolves and transforms into a deeply flavored broth. This method preserves the kombu’s natural taste, nutrients and intense umami character.
The result is a powerful, iodine-forward umami concentrate, capable of elevating dishes with just a small amount.
