A brief history of nori
Nori has been consumed in Japan for over 2,000 years. For centuries it was harvested from rocks at low tide, making it a luxury reserved for the nobility.
During the Edo period, Tokugawa Shogun recognised its economic potential and initiated net cultivation in Tokyo Bay. Production increased dramatically, popularising nori and leading to the dried sheet form, inspired by papermaking techniques, that we know today.
