Among Japan’s five major nori-producing areas, the Ariake Sea is the most highly regarded. Located in south-western Japan, near Saga Prefecture, its many freshwater rivers reduce salinity, giving Ariake nori its signature melting sweetness and refined flavour.
This exceptional nori is personally selected in Ariake by Koichi Gomi, third-generation master of Isoya, who chooses the finest seaweed with his own eyes and hands. Purchased at auction from the prestigious Nori Fishing Cooperative Association, this professional-grade nori comes exclusively from the first harvest of the season, when the leaves are youngest and most tender.
